In the vibrant heart of Mexico City, in the humble neighborhood of Colonia San Rafael, a small taquería has become a buzzword in the culinary world. El Califa de León is a tiny place, with only a few square feet and space for just 11 customers, who sit side by side. Despite its modest size and traditional charm, this little eatery has managed to earn a Michelin star, a rare and prestigious accolade, especially for such an unassuming and traditional establishment.
Simplicity that wins over the palate
With a menu consisting of just four dishes, the taquería stands out for its philosophy: less is more. According to chef Arturo Rivera Martínez, the secret lies in the simplicity of the ingredients and the care taken in selecting them. The typical taco features a high-quality corn tortilla, tender beef meat, and two homemade sauces: one green and one red. According to the Michelin Guide, the sauces are almost secondary because the true flavor shines through in the quality of the meat and the freshness of the tortilla.
The Gaonera taco: a tribute to tradition
Among the specialties at El Califa de León is the taco called Gaonera, inspired by the famous Mexican bullfighter Rodolfo Gaonera. Created in 1968, this dish has become a symbol of the taquería. The beef is perfectly cooked and seasoned only with salt and lime, served immediately in a fresh tortilla. The preparation is quick and coordinated by a well-practiced team: one person handles the meat, another the tortillas, and a third manages the orders. The entire experience comes at a very affordable price, around 5 dollars (approximately 4.50 euros).
Excellence born from authenticity
The first edition of the Michelin Guide in Mexico emphasized that Mexican cuisine is not only rich in flavors but also a blend of cultural and regional traditions. Gwendal Poullennec, the international director of the Michelin Guide, highlighted the importance of valuing regional cuisines and street food, recognizing the crucial role that places like El Califa de León play in the global gastronomic scene. El Califa de León demonstrates that true excellence comes from authenticity, quality ingredients, and respect for traditions, even when the place is small and unpretentious.
